The letter is a reminder that if you let us know by the end of your current school year that you plan on attending ‘Education in Hockey Day’ and we will have a Cyclones team member visit your school group on a mutually agreed upon date next school year. This is a field trip that you don’t want to miss, please let us know so we can reserve your seats today. Six Cheese Ravioli with Brown Butter Sauce

Ravioli stuffed with whole milk ricotta, mozzarella, parmesan, provolone, white cheddar, and romano cheeses then tossed in a house made brown butter reduction.

Montreal Grilled Beef Sirloin

Tender cut top sirloin seasoned with a blend of granulated garlic, coriander, black pepper, red pepper flakes, dill seed, and salt then grilled to perfection over an open flame.

Seared Sea Scallop with Burre Blanc

Fresh U10 Sea Scallops lightly seasoned and perfectly seared golden brown. Topped with a burre blanc made with fresh garlic and shallots, reduced white wine, and rich creamy butter.

Mushroom and Artichoke Risotto

Fresh sliced mushrooms and artichoke hearts gently sautéed and then added to Arborio rice that is slowly cooked with vegetable stock until it reaches that perfect risotto consistency.

Fresh Jalapenos sliced open and deseeded then stuffed with cream cheese and breaded with panko bread crumbs before being fried to a crispy golden brown. A perfect combination of spiciness to go with the creamy cheese in the center.

Sauerbraten

A tender cut of beef from the bottom round which is seared on all sides and then marinated in red wine vinegar, pepper corns, and other German spices for three days. The very acidic marinade helps tenderize the meat. It is then slow roasted in the oven until you can pull it apart with your fingers.

Almond Crusted Chicken

Tender all white meat breast of chicken perfectly seasoned and encrusted with crushed almonds to get that perfect crust that will insure all of the juice from the meat is held in.

Pumpkin Bread

We start by slowly roasting whole pumpkins until the insides become tender enough to scrape out with a spoon. We then puree this mixture along with our other spices to become the base for our bread. It is then combined with flour and eggs and baked at 350 degrees,

Chicken Skewers with Curry Cream Sauce Hardy’s Stamp Chardonnay Tender all white meat breast of chicken cut into thin strips and skewered, then lightly seasoned and baked in the oven. It is finished with curry and cream that is reduced down to make a wonderfully thick and rich sauce.

Cheese Stuffed Mushroom Caps Banrock Station Shiraz/Cabernet Blend Fresh button mushrooms that have the stem removed are stuffed with a tasty combination of Cajun cream cheese and parmesan cheese and then slow roasted in the oven to make the cheeses melt perfectly over the mushroom.

Tri Tip Beef BBQ Hardy’s Stamp Cabernet Sauvignon Fresh beef tri tip roast is first marinated in a blend of red wine, Worcestershire sauce, fresh garlic, black pepper, and olive oil. Then the meat is barbequed until perfectly cooked and then thinly sliced and topped with a red wine reduction sauce that also contains fresh thyme, shallots, and garlic.
